cool as a... sandwich.

In the last week of my pregnancy, I subsisted almost exclusively on peaches, Bluebell's mint chocolate chip ice cream, and cucumber + cream cheese sandwiches. Because what do you do when you're a million weeks pregnant in the middle of the summer? You eat cold foods and watch Fixer Upper in the air conditioning, that's what.

So today I'm featuring our elegant little friend, she of southern tea party fame, the cucumber + cream cheese sandwich. Here's what you'll need:

Cucumber + Cream Cheese Sandwich

  • seedy whole grain bread
  • 1 English cucumber, thinly sliced (this'll make a bunch of sandwiches)
  • plain whipped cream cheese
  • a pinch of dill
  • coarse sea salt

First, liberally spread cream cheese on each slice of bread. Now's no time to be stingy! You're a million weeks pregnant in the summer! (Or if you aren't, the excuse she told me to! will also do.) Layer thinly sliced cucumber on one side of the bread, and shower it with sea salt, to taste. Sprinkle the dill on the other slice. Please don't skip the dill. You may think you don't like it, but it adds a sort of peppery coolness that is just.... mmm. Don't skip the dill. Slap 'em together, put it on a pretty plate, and go turn on Fixer Upper. A happy summer to you. :)
