Simple Cucumber Salad (two ways)

When summer rolls around in Central Texas, I usually try to reduce our meals to some fruits and vegetables we can slice, dress, and eat cold in addition to something Rob can throw on the grill. Basically, we avoid turning on the stove at all costs because it turns our kitchen into a sweaty inferno. (Unless it's for cobbler. That's the exception.) 

Enter, the Simple Cucumber Salad. 

For the absolute epitome of simple lunch, peel a cucumber. You can peel it into those fancy little stripes if you'd like. Slice it, then quarter each slice. Toss it lightly with a simple vinaigrette, squeeze a little lemon on top, pepper generously, and toss in some crumbled feta. 

If you have a a little more time (and a mandoline slicer) peel and thinnnnnly slice a cucumber. Let it soak in a nice ice bath of water, white vinegar and a pinch of sugar. Leave it in the refrigerator for at least 30 minutes. Drain, serve on a cute little plate with a generous sprinkle of smoked paprika. Seriously. Yum. 

These are great for picnics also! Everyone will thank you for being the person who helped cool them off on the inside also.
